My Thailand recommendation would be cooking classes!! I spent one week in Chiang Mai taking cooking classes. Yummy, yummy. ANd I continue to impress my friends back home with my Pad Thai and other dishes. I took classes at the Chiang Mai Thai Cookery School, 1-3 Moon Muang Road if you get up that way.
I did cooking classes across Asia - Thailand, Vietnam & China - and loved it. Techniques I learned continue to influence my cooking.

My husband (Justin) and I leave on September 30th to backpack to various countries around the world for a year or so.
